The grapes for the 2019 Barolo Tresürì come from three different vineyards belonging to the Sebaste family. They are the crus Cerretta in Serralunga D'Alba, Monvigliero in Verduno and Roncaglie in La Morra. Three renowned vineyards with excellent sun exposure, each with its particular characteristics, are at their best when combined to create a classic Barolo of high quality. This best describes the Mauro Sebaste 2019 Barolo Tresürì DOCG.
After thinning in the summer, the grapes are harvested by hand into 25 kg perforated boxes. After further manual selection on shaking tables, the grapes are then gently pressed. Fermentation with daily pumping over takes place in temperature-controlled stainless steel tanks. After malolactic fermentation, the wine is aged for 36 months in 1600 liter French oak barrels and a few 400 liter tonneaux barrels. The Barolo is then stored in the bottle for a further six months before being sold.
This high-quality Barolo shows fine and elegant aromas with nuances of cherry, rose and sweet licorice. On the palate it appears full-bodied with soft tannins that are long and persistent. A very balanced and harmonious Barolo with a long future. Drinking window: 2023-2035
