The grapes for this Giribaldi 2016 Barolo Ravera Riserva BIO DOCG come from a plot on the Ravera vineyard in Novello.
Located at an altitude of 360 m above sea level with southern exposure, this location offers the best conditions for the Nebbiolo vine with a soil composition of calcareous marl - with a tendency towards loamy and an optimal water permeability.
The wine is made in the traditional way, pumping the must over the cap several times a day for 25 days to avoid drying out. This is done at a temperature of 30ºC to optimize extraction. The wine is then drawn off and stored in steel tanks for 2 months. The aging takes place in large oak barrels for over 60 months. The wine is then stored in the bottle in our underground cellar at a constant temperature of 16ºC before being sold.
The Barolo has a ruby red color with brick reflections, on the nose you can feel a sweet scent of alcoholic cherries, berry jam with hints of white pepper, typical of this Novello cru; complex nose followed by a warm palate with notes of vanilla, exceptionally soft and enveloping, with sweet and complex tannins; in the aftertaste, the spiciness also returns in the mouth, combining with the fruit with an incomparable elegance for an amazing century vintage like this Barolo 2016 Ravera Riserva.
This wine is a perfect accompaniment to roasts, game and red meat, pasta with white truffle or aged parmesan. Recommended drinking window: 2022 -2036
