The Nebbiolo grapes for Guido Porro Barolo Santa Caterina DOCG come from the small Santa Caterina vineyard, which is not far from Guido Porro's winery. The wines from this vineyard are characterized by their power and tight-knit tannins but also have a great deal of finesse, elegance and velvetiness. The aromas are varied with delicate spice, full fruit and slightly balsamic notes.
The harvest during the month of October is done by hand with immediate destemming and soft pressing of the grapes in the cellar. Immediately afterwards, temperature-controlled fermentation begins in stainless steel tanks before the wine is aged in large Slovenian oak barrels over a period of 24 months. After all, the wine is stored in the bottle for almost a year before it is sold.
The Barolo is ready to drink immediately and for the next 15 years. The winery does not use any herbicides, fungicides or pesticides in the vineyard and does not use any additives in the winemaking process. The Barolo goes very well with game and roast beef with a hearty sauce and mature hard cheese.
