Barolo Castelletto DOCG is a complex, pleasant and balanced red wine obtained from Nebbiolo grapes coming from a single vineyard, Castelletto. Located in the municipality of Monforte d'Alba, this vineyard was replanted in 1999 and has an east-southeast orientation with an extreme slope of the vineyard, which makes manual work such as grape harvesting essential.
Fermentation of the lightly pressed grapes occurs spontaneously with native yeasts and slow polyphenol extraction in temperature-controlled stainless steel containers.
After aging in large oak barrels for about three years, the wine then rests in concrete tanks for a few months and is finally bottled during the waning moon period.
