The Ca' del Baio Barbaresco Asili Riserva 2015 DOCG is a very elegant and mineral wine coming from the Asili site. A legendary vineyard that lies in the middle of the Barbaresco area, runs in a southwesterly direction. This location is very important for the Grasso family. It is the vineyard with which the family history began and to this day the Asili wines have remained the flagship of the winery.
Since the 2011 vintage, Giulio Grasso has also been producing a Riserva from Nebbiolo grapes from the Asili site. In order to receive the Riserva predicate, very strict regulations must be observed. For example, the Riserva must be matured/stored for 50 months before it can be sold. The winery only produces this very limited edition Riserva when the berries are ripe and the quality of the harvest is optimal.
When harvesting by hand, only the very best berries are selected for vinification compared to the classic Asili. The grapes are then very carefully placed in small boxes and immediately taken to the cantina for processing. The grapes are destemmed and gently pressed there, and fermentation is then triggered by natural yeast in temperature-controlled stainless steel tanks. The maceration time is 60 days to achieve a high extract. The wine then goes through a 50-month maturation process in used tonneaux oak barrels, including 1 year of bottle storage, before it is sold.
The result is truly great Barbaresco wine. Elegance, harmony and balance characterize this wine. The berry, mineral and balsamic aromas underline the complexity of this wine and the long-lasting finish is very impressive. The tannins are finely woven and create a beautiful mouthfeel. A Barbaresco who immediately shows his class, but he retrieves his full potential over the course of the following 20+ years. A perfect accompaniment to roasts, red meats and mature cheeses.

The Ca' del Baio winery, located in a valley in the Barbaresco area of Treviso, is a real family business.
The winery is run by the Grasso women - Paola, Valentina and Federica - with the full support of their parents Giulio and Luciana and has been in the family for four generations.
The Grasso women master all aspects of winemaking. They feel just as comfortable in the vineyard as they do at international wine presentations around the world.
Giulio Grasso, who has spent his whole life in the wine business, has been voted Winemaker of the Year 2016 by the prestigious Gambero Rosso wine guide.
