Very elegant and mineral wines come from the Asili Cru, which is one of the most important in the entire Barbaresco wine region. Located in the municipality of Barbaresco, this legendary vineyard has 14.25 hectares of vines and since the 1970s the Grasso family has owned 2.5 hectares. As a wine producer, the purchase of this parcel is of great importance for the family, not only because of the fame of the location. It is also the vineyard with which the family history began and to this day the Asili wines have remained the flagship of the winery.
After being hand-picked in October, the grapes are carefully selected and then destemmed and gently pressed. The subsequent fermentation takes place in temperature -controlled stainless steel tanks and lasts two months. The wine then goes through a maturing process of almost three years. The wine is matured in large oak barrels and in tonneaux, followed by six months of bottle storage before the wine goes on sale.
The result is a large, elegant Barbaresco with wonderfully soft and substantial tannins , an intense bouquet with fruity aromas of sour cherries and floral scents of violets. Spicy notes of black pepper and liquorice also begin to develop. Harmonious, soft and warm on the palate with a very good lasting length. A Barbaresco that immediately shows its class but will develop its full potential over the next 10+ years.
Ca' del Baio Barbaresco Asili 2020 DOCG is a perfect accompaniment to red meats, roasts, game and mature cheeses. The winery practices integrated viticulture and uses no herbicides, fungicides or pesticides in the vineyard and no additives in wine production.
