This Barolo Ciabot Minat Riserva is only produced in a limited number of bottles and only in excellent vintages. The wine is made from the grapes that come from the vineyard called Ciabot Minat. Located in the Bussia Visette area, this vineyard has a south-west exposure and soils of marl and tuff. All the best prerequisites for making a top-class Barolo.
Hand-picking takes place in late October each year and the subsequent mash fermentation takes place with local yeasts and lasts up to 25 days. The Barolo then matures in 500 liter tonneaux for one year and then in a 20 HL oak barrel for another 30 months. The aging process is finally completed with a one-year bottle storage.
The result is a very high-quality Barolo Ciabat Riserva single-vineyard wine with great potential for aging. Balsamic and berry notes of ripe plums, roasted hazelnuts and a hint of undergrowth predominate on the nose. On the palate, the wine is full-bodied, concentrated and dense with aromas of dried cherries. The tannin is fine-grained with plenty of tension right through to the finish. A great Barolo with power, complexity and balance.
Goes well with roasted red meat, game, truffle dishes, aged cheeses or simply for meditation.
