Eines der beliebtesten Nudelgerichte in ganz Italien sind Orecchiette con Cime di Rapa.
Ursprünglich stammt es aus Apulien, aber Sie finden überall Versionen dieses Gerichts. Ich bevorzuge die klassischste Zubereitung und verwende dafür wie immer nur die besten Zutaten.
Cime di Rapa ist Stängelkohl, die blättrigen, zarten Enden von etwas, das wie Brokkoli aussieht. Er gehört zur Familie der Kohlgewächse, genauer gesagt zur Familie der Brassicaceae. Sie können ihn in türkischen oder italienischen Fachgeschäften oder auf Ihrem Wochenmarkt finden.
Mein lokaler türkischer Gemüseladen hat ihn in den Wintermonaten im Angebot.
Orecchiette bedeutet auf Italienisch "kleine Ohren". Die kleinen Ränder dieser Grießnudelform fangen das Öl und den Geschmack perfekt ein. Die Einfachheit dieses Gerichts täuscht über seinen tiefen Umami-Geschmack hinweg, für den wiederum die Sardellen sorgen.
Dazu haben wir einen Barbera von Renato Corino getrunken, einem der besten Winzer des Piemont, der in LaMorra ansässig ist.

One of the most popular pasta dishes in all of Italy is Orecchiette con Cime di Rapa.
Originally it comes from Puglia, but you can find versions of this dish everywhere. I prefer the most classic preparation and, as always, I use only the best ingredients for it.
Cime di Rapa is stem cabbage, the leafy, tender ends of what looks like broccoli. It belongs to the cabbage family, more specifically the Brassicaceae family. You can find it in specialty Turkish or Italian stores or at your local farmer's market.
My local Turkish vegetable store has it on sale during the winter months.
Orecchiette means "little ears" in Italian. The small edges of this semolina pasta shape perfectly capture the oil and flavor. The simplicity of this dish belies its deep umami flavor, again provided by the anchovies.
With it we drank a Barbera from Renato Corino, one of the best winemakers in Piedmont, based in LaMorra.

Putzen Sie den Broccoli rabe und entfernen Sie die zähen Stiele.
Blanchieren Sie den Brokkoli rabe etwa 5 Minuten lang in kochendem Wasser und spülen Sie ihn anschließend in kaltem Wasser ab. Lassen Sie den Broccoli rabe in einem Sieb abtropfen und drücken Sie das überschüssige Wasser aus.
Drücken Sie den Broccoli rabe zusammen und hacken Sie ihn grob.
Zum Schluss hacken Sie den Knoblauch, die Sardellenfilets und die Chilischoten zusammen.
Kochen Sie das Wasser für die Pasta und fügen Sie eine großzügige Prise Salz hinzu. Kochen Sie die Nudeln nach Packungsanweisung.
Während die Nudeln kochen, erhitzen Sie das Öl und die Butter auf kleiner Flamme und geben die Mischung aus Knoblauch, Sardellen und Chilischoten in eine große Pfanne oder einen Wok.
Lassen Sie es NICHT anbrennen. Halten Sie die Hitze niedrig. Fügen Sie den gehackten Brokkoli Rabe hinzu. Halten Sie die Hitze niedrig und sautieren Sie ihn.
Wenn die Nudeln fast gar sind, geben Sie einen kleinen Teil des Nudelwassers zu der Brokkoli-Rabe-Mischung.
Geben Sie die Nudeln in die Brokkoli-Rabe-Mischung, vermengen Sie sie und schließen Sie dieHitze.
Servieren Sie das Gericht mit einer großzügigen Handvoll geriebenem Käse.
Passend zum Wein: Ich habe diese Pasta letzte Woche zubereitet und wir haben sie mit dem Renato Corino 2021 Barbera D’Alba kombiniert.
ENGLISH:
Clean the broccoli rabe and remove the tough stems.
Blanch the broccoli rabe in boiling water for about 5 minutes and then rinse in cold water. Drain the broccoli rabe in a colander and squeeze out the excess water.
Squeeze the broccoli rabe and chop it coarsely.
Finally, chop the garlic, anchovy fillets and chilies together.
Boil the water for the pasta and add a generous pinch of salt. Cook the pasta according to package directions.
While the pasta is cooking, heat the oil and butter over low heat and add the garlic, anchovy and chili pepper mixture to a large skillet or wok.
Do NOT let it burn. Keep the heat on low. Add the chopped broccoli rabe. Keep the heat low and saute it.
When the pasta is almost cooked, add a small amount of the pasta water to the broccoli rabe mixture.
Add the noodles to the broccoli rabe mixture, mix, and close theheat.
Serve the dish with a generous handful of grated cheese.
Matching wine: I made this pasta last week and we paired it with the Renato Corino 2021 Barbera D'Alba.
