Only very few grape varieties are used in Piedmont for winemaking that are not also autochthonous Piedmont grape varieties. Chardonnay, which is one of the most popular grape varieties worldwide, is one of the exceptions and has been used since the end cultivated in Piedmont in the 1980s. The Chardonnay grape variety shows the best results on calcareous soils and this was one of the reasons why Massolino wanted to grow this high-quality grape variety. Because the marl soils in Serralunga D'Alba have a high lime content and Massolino wanted, according to his own statement, a characteristic interpretation
After the manual harvest, fermentation takes place in cement barrels and then the wine is partly aged in barriques, in large wooden barrels and in cement tanks; it stays on the lees for at least twelve months before being racked and finishing its maturation. Finally, it is kept in the bottle for at least another six months before being put on the market.
The nose shows notes of ripe fruit in particular, a pleasant minerality combined with lively freshness. The Chardonnay feels warm and full-bodied on the palate and bewitches the palate with sweetness and perfectly integrated acidity and with a structure that the soil of the region has given it. A Chardonnay wine that, due to its structure, belongs to the group of structured white wines that have good development potential. This wine goes well with dishes based on seafood and river fish, such as trout, pike or zander. Also recommended with white meat that is stewed longer.
The winery operates organic viticulture.
