The Swanti wine, a tribute to Marco's German partner, is a curious wine that is constantly changing. He is always willing to experiment and therefore changes his composition from year to year. A little Nebbiolo, a little Freisa, maybe a little Barbera: it's a wine that we offer to friends with whom they play hide and seek. The only certainty is that the Swanti will always be outspoken, energetic and cheerful, with an unexpectedly "dark" soul.
This cuvée has Nebbiolo as the base wine and small parts of Barbera, Dolcetto and Freisa are added. The selection of which grapes go into this cuvée is always determined during the hand-picking at the beginning of October.
The alcoholic fermentation lasts about 10 days and takes place in temperature-controlled stainless steel fermentation tanks. This is followed by malolactic fermentation. Maturation also takes place in stainless steel tanks and lasts around 4-6 months, depending on the vintage. This cuvee is a wine with a complex and balanced composition that highlights the characteristics of the selected grape varieties.
The fresh and diverse notes of raspberries, wild berries, roses and plums impress on the nose. On the palate the cuvee has good density, structure and tension with good integrated acidity and accessible tannins. Good drinking flow! Goes well with meat appetizers, pasta dishes and chicken.
