The grapes from which La Ca Növa Langhe Nebbiolo 2019 DOC is pressed are harvested by hand and processed immediately. The fermentation then takes place in a large, open oak vat. This is followed by 12 months of aging in oak barrels and before the Nebbiolo goes on sale, it is stored in the bottle for another 3 months.

THE PRODUCER: LA CA NÖVA
On the ridge road that cuts through the Barbaresco growing area is the La Ca Növa winery, just outside the village of Barbaresco.
The name of the owner is Marco Rocca. He is an artisan and producer of top quality Barbaresco wines.
Marco has dedicated himself to traditional winemaking. It does not use temperature controlled fermentation. He stirs his mash by hand with a giant wooden spoon, an incredibly tedious and time-consuming job. But it allows him to extract more color and polyphenols from his mash, which sets him apart from almost everyone else.
Marco takes this hands-on approach from vineyard to bottling. He is a traditionalist - and this can be felt in all areas of the winery. He is an honest, direct and no-nonsense winemaker who makes truly exceptional artisanal products.
Marco has three different types of Barbaresco - a classic and two cru Barbaresco wines from Montestefano and Montefico. He also produces Nebbiolo, Barbera and Dolcetto.
