The native white wine grape variety Nascetta originated in the Barolo municipality of Novello and was threatened with extinction. Thanks to the efforts of some local winemakers in the 1990s, Nascetta, Anascetta or Anas-Cetta as it is also called, now has a permanent place in the ranks of the Langhe grape varieties.
The late-ripening white wine grape variety Nascetta is harvested by hand in October of each year and then immediately processed in the wine cellar. After destemming, a so-called cold maceration takes place before the mash fermentation. The mash is cooled down to 6-8° Celsius for 24 hours and only then does fermentation take place. In this case, cold maceration ensures that the wines are milder and fruitier. The mash is then fermented in a stainless steel tank and the wine then matures on the lees for six months.
On the palate it appears dense and the acidity is well balanced. Expressive scent with citrus aromas, honey and attractive spice. Good length. A good accompaniment to white meat, shellfish and sushi. Ready to drink immediately with good aging potential.
