Gavi is the classic Piedmont white wine par excellence.
It is made from 100% Cortese grapes. This grape variety thrives very well on clayey limestone soils, which are found around the small town of Gavi, from which this wine is named.
The hand picking of the grapes usually takes place at the end of August/beginning of September. After destemming, a short cold maceration takes place in steel tanks. The next step is fermentation, which is carried out slowly in a thermally controlled tank using specially selected yeasts. The Gavi wine is also matured in stainless steel tanks for six months.
This Gavi impresses with its freshness, liveliness and fruity notes such as apple or citrus. The acidity is present but well balanced and feels very pleasant on the palate. An uncomplicated country wine with good structure, density and plenty of drinking flow. A perfect aperitif, but also goes very well with fish such as trout or salmon. Cool, 9-10°, enjoy. Drink immediately or for the next two years.
