Gavi is the classic white wine in Piedmont par excellence.
It is made from 100% grapes of the local Cortese grape variety. This grape variety grows very well on clayey limestone soils, which can be found around the small town of Gavi, the namesake of this wine.
The hand-picking of the grapes usually takes place at the end of August/beginning of September. After destemming, a short cold maceration takes place in steel tanks. The next step is fermentation, which is carried out slowly in a thermally controlled tank using specially selected yeasts. The Gavi wine is also aged in a stainless steel tank for six months.
This Gavi impresses with its freshness, liveliness and fruity notes such as apple or citrus. The acidity is present but well balanced and feels very pleasant on the palate. An uncomplicated country wine with good structure, density and plenty of drinking flow. Cool, 9-10°, enjoy. Drinking window: 2023-2026
