Die Nebbiolo Trauben für den Fabio Oberto Barolo 2016 La Collina di Dioniso DOCG stammen von einem südöstlich ausgerichteten Weinberg aus der Gemeinde La Morra. Das hohe Alter der Rebstöcke von fast sechzig Jahren verspricht Lesegut von großer Qualität. Im Spätherbst werden die Trauben von Hand gelesen und nachdem Transport in den nahe gelegenen Weinkeller werden Sie entstemmt und im Temperatur kontrollierten Edelstahltank vergoren. Der Ausbau erfolgt danach im großen Eichenholzfass über einen Zeitraum von vierundzwanzig Monaten. Erst nach einer langen Flaschenlagerung kommt der Barolo dann in den Handel.
Dieser Fabio Oberto Barolo 2016 ist ein vollmundiger Wein mit feinkörnigem Tannin, guter Struktur, Spannung und Länge. Feiner Duft mit erdiger Würze, dazu balsamische und fruchtige Noten. Der Wein ist schon gut entwickelt und sofort trinkreif mit gutem Alterungspotenzial. Ein guter Begleiter zu Wild, rotem Fleisch, Risotto und reifem Käse.
