The Deltetto family's winegrowing history has its origins in Canale, on the same hill where the Roero Arneis is still cultivated today. The Piedmontese name "dai vej", which translates to "the old men", is intended to pay homage to our ancestors.
After the hand picking, the grapes are fermented in temperature-controlled stainless steel tanks. The expansion then also takes place in stainless steel tanks and lasts six months. After a short storage period in the bottle, the wine is then sold.
