The ancient and autochthonous grape variety Timorasso is also called the "white Barolo". Mainly because the wines have a high degree of elegance and complexity, not forgetting their enormous aging potential. Their home is in south-eastern Piedmont around the town of Tortona.
The grapes for this wine come from a small vineyard in the municipality of Montagnola. Hand picking takes place in October under normal weather conditions and the grapes are then carefully selected for further processing and transported to the winery in 15kg crates. Before fermentation, the must is clarified to produce a Timorasso with even better sensory characteristics. Maturation takes place after fermentation in stainless steel tanks over a period of twelve months and the wine rests on the full yeast.
The result is a Timorasso of great complexity, elegance and balance. The nose shows clear notes of ripe plums, fresh hazelnuts and beautiful mineral nuances. On the palate the wine is richly structured with nice acidity that beautifully supports the high alcohol content. The aftertaste is creamy and pleasantly long. The Cascina Montagnola Timorasso is now ready to drink, but develops its great potential over the next eight to ten years. Excellent with shellfish and raw seafood, chicken or turkey escalope, veal, raw meat, cold meat-based appetizers and medium-aged cheeses.
