Very elegant and mineral wines come from the Asili Cru, which is one of the most important in the entire Barbaresco wine region. This legendary vineyard located in the municipality of Barbaresco has 14.25 hectares of vines and since the 1970s the Grasso family of winemakers has owned 2.5 hectares. As a wine producer, the purchase of this parcel is of great importance for the family, not only because of the fame of the location. It is also the vineyard with which the family history began and to this day the Asili wines have remained the flagship of the winery.
After hand-picking in October, the grapes are carefully selected and then destemmed and gently pressed. The subsequent fermentation takes place in temperature-controlled r stainless steel tanks and then the wine goes through a nearly three-year aging process. Both in large oak barrels and in barriques, the wine is aged with subsequent bottle storage before it goes on sale.
The result is a large, elegant Barbaresco with wonderfully soft and substantial tannins, intense fruity, berry and mineral notes, harmonious and structured on the palate with very good length. A Barbaresco that immediately shows its class but will develop its full potential over the next 15+ years.
Ca' del Baio Barbaresco Asili 2017 DOCG is a perfect accompaniment to red meat, roasts, game and mature cheeses. The winery practices integrated viticulture and uses no herbicides, fungicides or pesticides in the vineyard and no additives in wine production.

Ca' del Baio is a family business in the 4th generation and is located in Treiso in the growing area of Barbaresco DOCG. The winery is run by the Grasso family - Paola, Valentina and Federica - with the support of their parents, Luciana and Giulio Grasso, who have been working in viticulture all their lives.
The Grasso women master all aspects of the Winemaking, from pruning the vines to selling internationally, and have guided their family winery into the future.
In 2016 Giulio Grasso was named Winemaker of the Year by Gambero Rosso.
