The grapes for this 2018 Colle Tortonesi Timorasso Morasso come exclusively from a family vineyard planted with old Timorasso vines. The hand-picking of these grapes usually takes place at the end of September each year. The berries are carefully selected for further processing during the harvest and placed by hand in 15 kg boxes.
In the winery, the grapes are then gently pressed, followed by a cold static decantation of the must and a slow fermentation that takes place at controlled temperature in stainless steel tanks. The aging then takes place and the wine ages in steel vats for about 12 months, alternating decanting with phases of aging on the noble lees; after bottling, the wine ages in the bottle for about a year and then goes on sale.
The color of this 2018 Timorasso is straw yellow with beautiful green reflections.
On the nose, the wine impresses with its very fine, intense and complex aromas. The clear notes of ripe plums, cedar wood, fresh hazelnuts and beautiful mineral nuances stand out in particular.
On the palate one feels the great structure and impressive balance. The refreshing and pleasant acidity that supports and balances the high alcohol content is long and with great flavor persistence.
We recommend crustaceans and raw seafood as accompaniments, first courses such as fish ravioli, chicken or turkey escalopes and medium-aged goat cheeses.
